Almond Butter + Dark Chocolate Cookies 

I love when I’m craving cookies and I know I can eat one (ok, maybe more like 3, 4 or 6) and not feel unhealthy afterwards. These are super easy to whip up – makes about 1 dozen. Not too sweet- I used 87% dark chocolate- if you like sweeter cookies, lower the percentage of the chocolate. Also, pro tip: have a cold glass of almond milk or iced coffee + cream + stevia to make the cookie eating that much more bomb diggity! 😊

Almond Butter + Dark Chocolate Cookies 

2 Tbl coconut oil or ghee, melted

1/4 cup coconut sugar or honey

3/4 cup almond flour 

2 Tbl almond butter – crunchy is best!

1 egg

2 tsp vanilla 

1/2 tsp baking soda 

1/4 tsp salt 

1/2 bar dark chocolate, chopped

Oven: 350°

In a medium size mixing bowl, add oil or ghee, sugar or honey, almond butter and vanilla, mix well. Add egg, mix well. Add baking soda and salt, mix. Add almond flour, mix well. Pour in the chopped chocolate bar pieces and gently mix. Scoop with tablespoon and drop onto baking sheet lined with parchment paper. Bake at 350° for 12 minutes. Let cool 5 minutes and then devour! ❤️
