This stuff is legit. I’ve always liked the taste of pumpkin pie but not the texture- these oats took care of that. Seriously so surprised how much I love these! Of course I’m loving the healthy factor too. Make these, you’ll be so glad you did!
1/2 cup oats (I used old fashioned)
1 cup organic unsweetened almond milk
1 Tbl ground flax seeds
1 can organic pumpkin purée
1/2 tsp Himalayan salt
1 Tbl pumpkin pie spice
2 tsp ground cinnamon
2 tsp organic vanilla extract
2 packages raw stevia
1/2 cup plain organic greek yogurt (or Siggis plain: my favorite!)
2 Tbl chopped raw pecans
In a mason jar (16oz.) or a microwave safe bowl, add oats, flax and milk. Mix well and microwave on high for 3 mins- or as package instructs- stopping every min to stir.
Empty can of pumpkin into a small bowl, add vanilla, cinnamon, salt, stevia and pumpkin spice. Mix well. (You’ll have extra for more oats later!)
Layer 1/4 cup pumpkin mix on top of oats, 1/4 cup yogurt, chopped pecans and top with a drizzle of honey.
